2 tbsp (30 ml) reduced-fat mayonnaise
2 tbsp (30 ml) Newman’s Own Parmesan & Roasted Garlic Dressing
4 thick slices whole wheat bread
6 slices nitrate-free deli turkey
1 prepared roasted red pepper, drained and sliced
1 cup (240 mL) baby arugula or spinach
2 slices provolone cheese
4 tsp (20 mL) olive oil
1. COMBINE mayonnaise and dressing; spread over 1 side of each slice of bread. Dividing evenly, top 2 of the slices with turkey, red pepper, arugula and cheese; sandwich with remaining bread.
2. BRUSH outside of sandwich with oil. Grill in panini press until golden and cheese is melted, about 6 minutes.
