FOR CHICKEN:
1 tbsp (30 mL) vegetable oil
1 large (8 oz/225 g) chicken breast, cut in bite-sized pieces
Salt and pepper
FOR PIZZA:
1 lb (454 g) store-bought pizza dough, brought to room temperature
3/4 cup (175 mL) Newman’s Own Hickory BBQ Sauce
1 1/2 cups (355 mL) shredded mozzarella cheese
⅓ cup (80 mL) thinly sliced red onion
2 tbsp (30 mL) coarsely chopped cilantro
1. Preheat oven to 450ºF. Heat oil in a large skillet over medium-high heat. Season chicken with salt and pepper and add to pan. Cook, stirring occasionally, until golden brown and cooked through, 4-5 minutes. Set aside.
2. Roll pizza dough to a circle or rectangle about ⅓” thick and position on a parchment-lined baking sheet. Spread with Newman’s Own Hickory BBQ Sauce, leaving a ½” border at the edge. Top with mozzarella, then chicken and red onion. Bake on bottom oven rack for 12-15 minutes, until crust is golden and cheese is bubbly. Sprinkle with cilantro.
