1/4 cauliflower, cut into florets
1/4 loaf sourdough bread, cut into cubes
1 bunch broccolini
1 handful arugula
3 tbsp store-bought dukkah mix
Newman’s Own Creamy Caesar Dressing
Preheat the oven to 180C and combine the cauliflower and the bread cubes on a tray and dry roast for 20 minutes. Place the broccolini on another tray, drizzle with olive oil and sprinkle with sea salt then add to the oven for the final 10 minutes or until everything is cooked through and beginning to brown up.
Toss the cauliflower, croutons, broccolini with remaining ingredients then dress with the Creamy Caesar dressing.
