Flavourful Alfredo sauce replaces mayo in this creamy, bacon-studded potato salad. It will instantly become a favourite!
1½ lbs (680 g) baby potatoes, halved
1 tbsp (15 mL) coarse salt
½ cup (125 mL) Newman’s Own® Alfredo Pasta Sauce
6 slices cooked bacon, finely chopped
1 green onion, finely minced
1 tbsp (15 mL) freshly squeezed lemon juice
1. PLACE potatoes in a large saucepan with enough cold water to cover them. Season the water with salt, then bring to a boil over high heat. Reduce heat to medium-low, cover, and cook about 10 minutes or until potatoes are tender but not falling apart. Drain in a colander, running cold water over top until cooled.
2. TOSS potatoes with Newman’s Own® Alfredo Pasta Sauce, bacon, green onion and lemon juice.
