Mediterranean Roast Vegetable Salad

Featuring Newman’s Own® Balsamic Vinaigrette Dressing


1 red capsicum, cut into thick strips
3 zucchini, sliced into thick rounds
4 ripe tomatoes
1 red onion, quartered
2 tbsp olive oil
200g bocconcini
1/4 cup Newman's Own® Balsamic Vinaigrette Dressing
1 handful of basil


Preheat oven to 200 C (400 F). Combine the capsicum, tomato, zucchini, onion and a good splash of olive oil in a baking tray and cook for 35 minutes or until the vegetables are cooked through.

Transfer to large bowl and while still hot, dress withl Newman's Own Balsamic Vinaigrette Dressing. Add the basil and bocconcini and gently toss to combine. Serve in the sun with crusty bread. Serves 4.
