Butch Cassidy and the Sundance Kid Western Salad

Featuring Newman’s Own® Olive Oil & Vinegar Dressing

Paul Newman and Robert Redford may have won the West with this classic film, but this salad is sure to win taste buds at home. A mix of avocado, lime, black beans and corn make this layered salad a perfect fit for summer entertaining.

Makes 6 to 8 servings


2 large ripe avocados, peeled and chopped
Juice of 1 lime
Salt and pepper
1 head red leaf lettuce, torn into bite-size pieces
1 19 oz (540 mL) can black beans, rinsed and drained
1 12 oz (341 mL) can corn, rinsed and drained
4 green onions, chopped
Half pint grape tomatoes, sliced in half
1 cup (250 mL) grated sharp cheddar cheese
Newman’s Own® Olive Oil & Vinegar Dressing, as desired




1. PLACE avocados in medium bowl. Toss with lime juice. Season to taste with salt and pepper; set aside.

2. IN a glass bowl if possible, layer half of each of lettuce, beans, corn, green onions, tomatoes, avocado and cheese. Repeat layering with remaining ingredients. (Can be made 3 hours ahead. Cover; chill).

3. DRIZZLE with Newman’s Own® Olive Oil & Vinegar Dressing and serve.

Serving Suggestion: Add cooked or grilled shrimp as one of the layers for a main course salad.
