Blueberry & Goat Cheese Salad

Featuring Newman’s Own® Balsamic Vinaigrette

Makes 2 servings


8 ounces (250gr.) mixed greens
1/3 cup + 1 tsp. Newman’s Own Balsamic Vinaigrette
1/4 cup fresh blueberries
1/3 cup soft goat cheese
1/4 cup sliced cherry tomatoes
1 tbsp. sunflower seeds
1 tbsp. pumpkin seeds




1. PUT sunflower and pumpkin seeds in a small sauté pan.  Turn heat on medium and sauté seeds for about 3-4 minutes until lightly golden brown.  Remove from heat and add 1 tsp of Newman’s Own Balsamic Vinaigrette.  Set aside.

2. IN a large mixing bowl, toss gently, mixed greens, blueberries and sliced tomatoes with 1/3 cup of Newman’s Own Balsamic Vinaigrette.

3. SERVE immediately on chilled plates. Top each salad with toasted sunflower and pumpkin seeds.  Garnish with goat cheese.
