Grilled Tofu with Italian Tomato Salsa


1 pkg (350 g) extra-firm tofu, cut crosswise into scant ½-inch (1 cm) thick slices
1/3 cup (80 ml) Newman’s Own Family Recipe Italian Dressing
2/3 cup (160 ml) couscous
2 green onions, chopped
2 tomatoes, seeded and diced
Pinch each salt and pepper
1/4 cup (60 ml) chopped fresh basil


1. PLACE tofu on greased grill over medium-high heat; close cover and grill, turning once and brushing occasionally with 1/4 of the dressing until warmed through, about 6 minutes.

2. MEANWHILE, pour couscous into bowl; stir in half of the green onions and the salt and pepper. Pour in 1 cup boiling water; cover with plastic wrap and let stand until liquid is absorbed, about 5 minutes. Fluff with fork.

3. IN small bowl, toss together tomatoes and remaining green onions and dressing. Arrange couscous on plate; top with warm tofu and tomato mixture. Garnish with basil.
